The Roosevelt Island Pinks Cantina restaurant serving Mexican fusion food with a NYC twist has been open for almost a month and receiving very good reviews.
Alex and Kat are the husband and wife team owners of Pinks Cantina and also Roosevelt Island residents.
I spoke with Alex and Kat earlier today. Alex described the Pinks Cantina’s menu offerings:
What you have here is our Mexican offering, which is Chipotle style build your own Bowls, Quesadillas, Tacos, and Burritos. And then we have some of our classics over here, a Tostada House Tortillo, which is awesome. And over here is our fusion menu. We’re known for our Chopped Cheese Burrito, and we have cool items like Chicken Parm Tacos and Roast Beef French Dip Tacos. And our Korean K Town Tacos have been a huge hit so far.
Kat added:
We wanted to bring as many different flavors as we could since we know that Roosevelt Island has a limited set of options. Hopefully, this way there’s something for everyone every time you order.
We also have soft serve, cotton candy, we have churros. We’ll have popcorn and frozen lemonade in the spring. So, we really wanted to bring an energetic, vibrant, friendly atmosphere to the island and kid-friendly and family oriented.
We moved here three, four years ago and fell in love with Roosevelt Island immediately. We’re both long time New Yorkers but had never been on the Islands until that point and we never want to leave.
